Holmes wasn’t in the movie simply because of a scheduling issue. Director Jon Favreau had already offered her the role, so when Zooey Deschanel auditioned, he didn’t even need her to read lines. They just chatted instead.

Deschanel explained that the character was flexible and adaptable to whoever played her, and the filmmakers knew she could sing because she performed in a cabaret show.
